    We cooked another picnic roast this weekend and knocked it out of the park, another homerun using the Slow n Sear XL PLUS on the 26 inch Weber kettle. The wife said that I did decent barbecue in the past that was edible, but now she says you’re doing a whole lot better and the more I use it the better I’m getting. The advice that I got to do a couple of dry runs before I started grilling paid good dividends, so I knew what my grill was going to do before I ever used any meat on it. You guys have one heck of a support base to those who need advice or help, it’s just unbelievable.

    Yesterday I made the pulled beef-wow! It is not hard and I like it even better than pulled pork.
    I got my Slow N Sear and Drip Pan (which I keep clean with foil) and have loved using it.
    I was trying time and again to get the lower temps with my old Weber Kettle but now
    it just happens !
    What a great product!
    I did make the mistake of having too much meat for the amount of coals I started with.
    I had to finish the foil wrapped stage in the oven (250F) but the smokering was set, deep and
    beautiful. The beef was so tender and I cut it in pieces just like the video said to.

      PS I like the bottomless version because when I pour out the leftover water, the ashes stay in the Kettle. 🙂
