A good digital thermometer

We can’t emphasize strongly enough the importance of having good digital thermometers. At minimum you should have a dual-probe thermometer to simultaneously monitor pit temperature (note: your dome thermometer is not accurately measuring temperature at the grill surface) and a leave-in probe for meat temperature. Any backyard cook will also be well-served by an instant-read thermometer to quickly check and confirm meat temperatures. Cooking to temperature, not time, is critical to perfect food every time.

Contoured Drip Pans

Drip pan – when used as a drip pan, the Drip ‘N Griddle Pan – Deluxe is placed on the charcoal grate below the indirect cooking zone on the food grate. It provides coverage to catch drippings from even the largest cooks, has raised edges to accommodate the messiest cooks, and has convenient handles for easy removal. Drip ‘N Roast – Deluxe

This black porcelain-coated Pan is a great choice at a lower price point if you’re not interested in griddling.  The porcelain coating makes this a durable, dependable Drip Pan that can also be used with indirect heat for roasting.
