A good digital thermometer
We can’t emphasize strongly enough the importance of having good digital thermometers. At minimum you should have a dual-probe thermometer to simultaneously monitor pit temperature (note: your dome thermometer is not accurately measuring temperature at the grill surface) and a leave-in probe for meat temperature. Any backyard cook will also be well-served by an instant-read thermometer to quickly check and confirm meat temperatures. Cooking to temperature, not time, is critical to perfect food every time.

Drip ‘N Griddle Pan
